One of the great things about this buffalo chicken dip is that you only need 10 ingredients! Although you will need to do a bit of prep work ahead of time because you’ll need about 2 cups of cooked and shredded chicken and 8 slices of cooked and chopped bacon first. The easiest and most time efficient way to do this is to poach the chicken in a pot of water on the stove and cook the bacon in the oven while you prepare and combine the remaining ingredients.

You will also need an 8 ounce block of cream cheese, a 7 ounce can of diced green chiles, 1 cup of diced onion, and 1 cup of shredded cheddar cheese, plus more for topping the smoked buffalo chicken dip if you’d like.

Smoking can dry out foods faster than some cooking methods because it lets a lot of the moisture in the food cook off for longer. Because of that, for this smoked dip, we will add a bit more liquid ingredients than a normal buffalo chicken dip may call for. It all perfectly incorporates together into the perfect consistency at the end! Cooking Steps for Prepping & Smoking Instructions

Step 1

The first step when smoking buffalo chicken dip is to preheat your smoker to 300 degrees F., and then prep all of your ingredients. As you’re prepping each ingredient, add it into a large cast iron skillet or dish, or into a 9×13-inch aluminum pan.

Step 2

Once all of the ingredients are in the skillet or pan, use a large spoon to stir well so they all incorporate and mix together. The cream cheese will still be in the cubes and won’t mix in well until they’ve been heated. Place the skillet or pan onto the heated smoker and close the lid.

Step 3

Smoke the buffalo chicken dip for 30 to 35 minutes, stirring halfway through to mix that cream cheese into the dip. 5 to 10 minutes prior to removing it from the smoker, sprinkle additional cheese, green onions or parsley over the top of the dip. Once the cheese on top is hot and melted, remove the buffalo chicken dip from the smoker.

Tips for Smoking Buffalo Dip on a Pellet Grill

  1. You can use any wood pellets you prefer for smoking this recipe, but the ones I would go with if you have them are the Signature pellets, Hickory pellets or Pecan pellets.
  2. Keep your buffalo chicken dip uncovered while it’s smoking. This allows more of the smoke flavor to penetrate into the chicken.
  3. Stir it halfway through to incorporate the chunks of cream cheese into the rest of the dip. This is much easier to do once they’re hot and melty!

How to Serve Smoked Buffalo Chicken Dip

There are so many ways to enjoy smoked buffalo chicken dip! Of course you can use as intended, as a dip for an appetizer, and serve with chips or crackers, celery or carrot sticks, sliced radish or bell peppers. Or you can use it as filling for baked potatoes, quesadillas, wraps, lettuce cups or tacos.

Storing Instructions

To store smoked buffalo chicken dip, you will first want to ensure the dip has completely cooled. Then you can transfer it into a container with a lid and place it in the refrigerator. Store it in it’s airtight container for up to 5 days.
