I love this soup. It is so easy and fast to make and tastes delicious. I can't get enough of it. I've made it with fire roasted tomatoes and without and they are both good. I love the texture. It reminds me of some kinds of gazpacho and I bet this would taste just as good cold. This is also a great meal when you need to make something for someone else paired with a salad.

This super fast soup has been a great addition to our weeknight dinner rotation for cooler weather! Wouldn't serve it for a formal dinner party, but it's a definite winner for my favorite dinners - those with my family after busy work and school days!

The texture is too grainy. This is after blending it in a high-powered blender and again with an immersion blender. Maybe the onions should be cooked down more because they are what you get in the "grains."

I can't believe all of the 5 star ratings for this soup. Yes, it was fine, but nothing to stop the presses over. A five-star dish is something I would be served in a good restaurant. This is not that dish. I made it exactly as written and found it to be a bit heavy on the basil and over all tasted like canned tomatoes. It was ok, not awful, but not any where in the league of food to be served at a special affair.

Served this up for a quick lunch today for myself, my 12 and 14 yr old sons, my husband, and a friend. ... Everyone ate it up. I made minor changes that probably will change the overall taste though .. I did not have fire roasted tomatoes so I just used regular diced tomatoes (canned) and added a small can of tomato sauce that already had italian spices in it. I used 2% milk because that is what I had, used dried crushed basil seasoning, I used that pre crushed/diced jarred garlic. I used a whisk at the end to get the little bits of cream cheese clumps that stayed after blending. I served it with a slice of toasted bread with butter and powdered garlic. I'd make it again in a heartbeat. Simple, and tasty. I think this would also work with only 1 cup of milk and 1 cup of chicken broth if you want to cut back on the calories. Probably you could cut back the cream cheese by half too to lose some more calories but still keep the "taste" and creaminess.

In reading these posts I had to double check to make sure we were talking about the same soup recipe. I clipped my from Cooking Light magazine which did not list the last four ingredients but they really had no bearing on the overall results of this soup. I made it exactly according to the printed instructions, except I chopped my onions. A waste of time and ingredients. A huge disappointment. The soup had a curdled texture, the fresh basil added nothing to the overall flavor which we thought was way off anyway. It makes a large batch but I ended up dumping all of it. We each tried about 1/2 cup to see if we could determine what was missing with no luck.

This was a simple recipe to make but I found it lacking in flavor. I added a can of tomato paste, more salt and pinch of crushed red pepper. This made all the difference and everyone loved it!

I made the soup, not the bread. This was a good, solid, and easy soup to make. I used less oil, an extra clove of garlic, 1/4 cup dry basil since didn't have fresh, an extra 1/4 tsp. salt. Also, I used 1/2 cup whole milk and 1 1/2 cups skim milk. An immersion blender saves a lot of time and mess for the blending part.

Good soup but I felt like something was missing. I think I didn't add enough basil. I might add some tomato paste as well. Using the hand blender made it easy to do! All in all a good recipe.

I don't usually like the flavor from canned tomatoes, but I loved this soup! Very quick and easy, especially with an immersion blender. Made it with grilled cheese instead of toasting bread. Delicious!

Super delicious! And it comes together fast using a hand blender. From start to table, it must have taken me 20 minutes. I used about an extra 1/4 cup of basil. I also bought regular diced tomatoes instead of fire-roasted, and the recipe was still delicious.

I plan to make this soon. I probably will use evaporated milk since I don't think I have cream cheese on hand and add butternut squash. I couldn't find fire roasted tomatoes, so Italian stewed will have to do. I do have French bread with roasted garlic and other herbs to go with it. Maybe use in a grilled cheese?

This was pretty good but I didn't blend it well enough because I tried using a FP vs blender. Next time, I'll go with the blender. Both DH and DD asked if there was bacon in the soup; this was probably the fire roasted tomatoes. It had a good flavor and it seemed creamy enough. I'll make it again, it was very easy and would also make a good base for adding other things to - shrimp would be great!
